Fairmont Hotel Macdonald Welcomes Mridul Bhatt, New Executive Chef

Since 1915, Fairmont Hotel Macdonald has offered culinary experiences for every occasion; the creativity and passion is evident in every dish the hotel’s award winning culinary team prepares. This iconic landmark was imagined to be a part of the new railway system and set high on the hillside to welcome newcomers to Edmonton. The hotel’s offering of world-class Fairmont cuisine, has also never been outrivaled; in the spirit of its ever evolving authentic dining, Fairmont Hotel Macdonald welcomes the newest member of its executive team, Mridul (MREE-DUAL) Bhatt (BAT) as Executive Chef.

“Since the MAC was returned to its former glory and reopened in 1991, we’ve had eight (now nine) executive chefs lead our culinary teams – it’s no easy feat. We look forward to welcome the talent of Chef Bhatt and have him share his global culinary theories and techniques with our team and our guests,” said Garrett Turta, general manager.

With over a decade of international culinary experience, a life-long passion for cooking and a delightfully, creative approach that appeals to all palates, Chef will oversee cuisine for eight banquet and meeting rooms, in-room dining department, and two hotel dining outlets, The Harvest Room and The Confederation Lounge.

“After 13 years in the industry, it’s a dream come true to lead a Fairmont hotel culinary team in the heart of a city building up its culinary name. I look forward to being a part of this exciting growth and serving up tasteful memories,” said Mridul Bhatt, executive chef.

In the quest to find a new executive chef, Fairmont Hotel Macdonald scanned the globe, and received applications from as far as Egypt, Estonia and Singapore, only to find that the right man for the job was already a part of the Fairmont family. "We are thrilled to now have Chef Bhatt in Edmonton and to bring our guests a fresh dining experience that has modern sophistication and classic charm," said Turta.

Executive Chef Bhatt is excited to join Hotel Macdonald and take all of the current local commitments initiatives to the next level. “I sincerely cannot wait to further develop the honeybee program, from adding one more hive to make a total of three hives in the gardens, to innovate ways to foster and grow a sustainable herb garden, and to work with local farmers, such as Prairie Gardens, Sunworks Farms, and the Morinville Colony Egg Barn to name a few,” said Bhatt.

Executive Chef Bhatt’s first upcoming event will be Royal Tea in the Queen Elizabeth II Suite to take place on Sunday, July 16, 2017. The exclusive tea event will have limited seating and be an experience like no other. Reservations are still available and can be made by calling 780 777 9818.

Born and raised in New Delhi, India, Mridul reflected his culinary inclination at a young age. After graduating in Hotel Management from India, Mridul sharpened his skills by completing his apprenticeship at the Prestigious Taj Hotel, New Delhi.

Fairmont Hotel Macdonald has long been known as the most elegant hotel in Edmonton and is lovingly referred to as 'The Mac.' After four years of construction, the Hotel, named after Canada's first Prime Minister, Sir John A. Macdonald, opened its doors on July 05, 1915 and was destined to become the centre of Edmonton's social life. Situated high on the bank overlooking the North Saskatchewan River valley, the seven-story Grand Trunk Pacific Hotel (faced with Indiana limestone and roofed with copper) was built and furnished at a cost of about $2,250,000 (over $35 million today). The characteristic Chateau style, an adaptation of French 16th Century castles, was first brought to Canada in 1892. After more than half a century of glamour, Fairmont Hotel Macdonald closed its doors in 1983 after the Universiade Games, as it had fallen into a state of disrepair. On January 08, 1985, the City of Edmonton designated the Hotel as a Municipal Heritage Resource (and thereby saving it from the wrecking ball) and was the first building in Edmonton to receive this special designation. Five heritage areas are included in the designation: The building exterior, The Confederation Lounge, the Lobby, the Wedgwood Room, and the Empire Ballroom.
