Fairmont Offers Eco-Friendly Cuisine and Sustainable Meeting Options

TORONTO, March 11, 2008 - Responding to guests’ need to please their palates while also minding their health, Fairmont Hotels & Resorts recently announced a brand wide commitment to use, wherever possible, sustainable, locally sourced and organically grown products as part of everyday food service operations, the first hotel company to do so. As part of an ongoing process in which Fairmont will continuously assess where it can make a difference through responsible food purchasing practices, menus across the chain will reflect this focus on fresh cuisine later this fall. This new initiative follows the move to eliminate all artificial trans fat from dining offerings earlier this year.

Fairmont's Green Partnership, the company’s award-winning environmental program, encourages guests to think green when traveling and offering healthful and delicious menu choices that highlight organic wines, local purveyors and on-site herb gardens is a natural extension.  Fairmont has taken the proactive step of reviewing its purchasing and food sourcing practices to see in which areas more sustainable choices can be incorporated, both at a hotel and a corporate level. For example, all hotels worldwide offer guests the choice of menu items prepared with organic eggs.

In addition to highlighting these choices on menus, many Fairmont properties will also offer innovative guest experiences such as winemaker’s dinners, Shop with the Chef excursions, cooking classes, and trips to the farms where guests can learn where the food is sourced.

Meeting planners can also incorporate sustainable choices in their events through Eco-Meet, the company’s environmentally friendly conferencing program by including local, seasonal and organically grown menu items and innovative eco-inspired meeting breaks. Available at all properties, Eco-Meet offers planners wanting to “green” their events the chance to do so through four key components:

· Eco-service provides "disposable-free" food and beverage services and recycling stations in the meeting rooms, such as china and cutlery used instead of disposal items or centerpieces that are edible/organic or made from reusable items such as silk flowers.
· Eco-accommodation offers in-room information, recycling bins, optional sheet and towel replacement at select properties, energy-efficient lighting, and water-conserving showerheads, toilets and tap aerators.
· Eco-cuisine menus incorporate local, seasonal and organically grown foods wherever possible.
· Eco-programming provides activities and guest-speakers to complement the Eco-Meet experience, such as a keynote address or a full-day team building eco-experience. There are also paperless services available for events including a dedicated TV channel to provide information and updates to delegates, electronic paperless check-in/checkout and e-mailed contracts and information used where possible. Fairmont will also assist meeting planners to offset their event’s greenhouse gas emissions by purchasing green tags/energy certificates.
